How to Make the Viral Charcuterie Chips Caprese Style

Ingredients:

  • 1 Bag Potato Chips (these Siete chips are my favorite)
  • 1 Pint Cherry Tomatoes, halved
  • Fresh Mozzarella Log, torn into pieces
  • 2 Tablespoons Fresh Basil, chopped
  • Balsamic Glaze, for drizzling
  • Prosciutto, torn into pieces (optional)

Equipment:

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Place a piece of parchment paper on a 9×13 cookie sheet. You can definitely use a full-size cookie sheet if you’re feeding a crowd and need to double the recipe.
  3. Spread the potato chips on the cookie sheet in an even layer.
  4. Spread the tomatoes, the mozzarella, then the basil evenly on top of the chips. If including prosciutto, spread it evenly on the chips too.
  5. Bake in the oven for 10-15 minutes or until the cheese is melted.
  6. Pull the chips from the oven and sprinkle on the basil and drizzle generously with balsamic glaze.
  7. Serve immediately and enjoy!

Pro Tips

Choose the right chip. Go for a sturdy chip. Thick or kettle-cooked varieties hold toppings better without becoming soggy.
Prep ingredients in advance. Slice tomatoes and mozzarella ahead of time, keep basil fresh, and store everything chilled until assembly. This keeps ingredients fresh and vibrant.
Add a sprinkle of sea salt. Once assembled, a light sprinkle of flaky sea salt enhances all the flavors.
Serve immediately. Serve directly off the cookie sheet or slide the parchment paper onto your serving platter or board.

Recipe Riffs & Swaps

Try Goat Cheese or Brie Cheese Instead of Mozzarella: Swap the mozzarella for tangy goat cheese or creamy brie for a different flavor profile.
Add Prosciutto: For an extra touch of salty goodness! Layer thin slices of prosciutto or other cured meat on top of the chips.
Use Different Dips: Experiment by serving alongside pesto, hummus or other dips.
Make It Vegan: Replace mozzarella with a plant-based cheese and leave off the prosciutto to make it vegan-friendly.

Flavor Boosters

Fresh Cracked Black Pepper. A few cracks of black pepper add subtle heat that sharpens the sweet and creamy elements.
Lemon Zest. A sprinkle of lemon zest brightens the whole dish with fresh citrus notes, making it even more refreshing.
Toasted Pine Nuts. Sprinkle a few toasted pine nuts on top for extra crunch and nutty richness.
Chili Flakes. For a spicy twist, add a few pinches of red chili flakes.

Freezing & Storing Leftovers

Freezing: This recipe is best enjoyed fresh; freezing is not recommended as the texture will not be the same.
Storing: If possible, store components separately in airtight containers and refrigerate. If storing assembled, use the oven or air fryer reheating method below for best results for the chips to crisp back up.

How To Reheat

Oven Method – Best for warming toppings without losing chip crunch. Preheat oven to 350°F (175°C). Place assembled bites on a baking sheet and warm for 5-7 minutes, watching closely so they don’t burn. Air Fryer Method – Best for restoring chip crispness post-assembly. Heat at 350°F (175°C) for 2-3 minutes to crisp chips again, but watch closely so toppings don’t dry out or burn.
Microwave Method – Best for quick warming, but chips may lose crunch, and I don’t recommend this method.

FAQs

Can I make this ahead and store it assembled? It’s best to assemble and bake this dish just before serving to keep chips crisp, but you can prep the separate ingredients ahead of time.
What chip type works best? Thicker, kettle-cooked potato chips are best because they hold toppings better and stay crisp longer.
Can I substitute mozzarella with another cheese? Yes, burrata or any mild, creamy cheeses are excellent alternatives.
Is balsamic glaze necessary? Balsamic glaze adds a beautiful sweet tang that elevates the flavors, but you can substitute it with honey or hot honey instead.
Can this be made gluten-free? Absolutely, as long as you choose gluten-free potato chips and verify other ingredients are safe.
