The Viral Potato Chip Charcuterie: Caprese Style

Crispy potato chips serve as the perfect, salty base for a fresh Caprese topping of juicy tomatoes, creamy mozzarella, and fresh basil. Potato chips have never looked so sophisticated!

Ingredients
  

  • 1 Bag Potato Chips
  • 1 Pint Cherry Tomatoes, halved (I used about 3/4 of the pint)
  • 1 Package Prosciutto, torn into pieces (optional) (I used about 3/4 of the package)
  • 1 Mozzarella Log, torn into pieces (I used most of the log, measure with your heart!)
  • 2 Tbsp Fresh Basil, chopped

Equipment

  • Cookie sheet
  • Parchment Paper
  • Cutting board
  • Paring Knife
  • Serving Platter or Charcuterie Board

Instructions
 

  1. Preheat your oven to 350°F (175°C).
  2. Place a piece of parchment paper on a 9x13 cookie sheet.
  3. Spread the potato chips on the cookie sheet in an even layer.
  4. Spread the tomatoes, the mozzarella, then the basil evenly on top of the chips. If including prosciutto, spread it evenly on the chips too.
  5. Bake in the oven on 350°F (175°C) for 10-15 minutes or until the cheese is melted.
  6. Pull the chips from the oven and sprinkle on the basil and drizzle generously with balsamic glaze.
  7. Serve immediately and enjoy!

Notes

  • If feeding a crowd, you can use a full-size cookie sheet and double the recipe.
  • You can use a solid or sliced mozzarella log, just tear into bite-sized pieces. 
  • Small mozzarella balls work too and no tearing is needed!
