St. Patrick’s Day Charcuterie Board {Girl Dinner}

Welcome to the first installment of the new Girl Dinner Series, where I share a small charcuterie board made for one. It really makes more than one person probably needs, but it is confined to a dinner-sized plate and will be tailored to the current month or holiday.
You know those rare times when you’re home alone with no husband or kids around and you’re craving snacky foods rather than making a big dinner? I know, ladies, it’s rare! If only we could get the men and children to enjoy eating this way, am I right?!? My mom and I always say we could just eat all the apps for dinner instead of having to make a square meal!

What is a Girl Dinner?
A Girl Dinner is an easy-to-make dinner that consists of your favorite snacks like meats, cheeses, crackers, fruits, vegetables, nuts, dips, and spreads – essentially a charcuterie board for one! There are no strict rules to a “girl dinner”; it’s all about avoiding the effort of cooking a full meal and eating what you want when you want. Bonus points if it’s a beautiful, aesthetically pleasing plate!
In order for the ‘girl dinner’ to suffice as an actual dinner, I try and make my board as well rounded as possible to include a:
- Protein
- Vegetable
- Fruit
- Cheese
- Crunch
- Sweet

How to Make a St Patrick’s Day Girl Dinner Board
Grab your dinner plate or small board, gather all your ingredients together, and get creative! I like to use a round board the size of a dinner plate or a round dinner plate with a lip; 9 or 10 inches is perfect.
To make this board, use the cookie cutter to cut out a shamrock shape from the brie. Start with the brie and place it in the middle of the board or wherever it works best for your design. Next, place the small bowl of onion dip (or other spread, dip, or jam you are using) on the plate. My homemade Greek yogurt onion dip is the perfect dip to pair with the potato chips and veggies.
Now it’s time to get creative! Start placing the other snacks around the brie and the dip bowl until you’ve filled the plate, making sure to distribute the types of snacks and colors evenly.

Ingredients:
- Brie wheel
- Onion dip (or any dip or spread)
- Turkey and ham, 3-4 slices of each
- Irish Porter cheddar cheese (or any Irish cheese)
- Goat cheese
- Honeycomb
- Sugar snap peas
- Green bell peppers, sliced (or green veggies of your choice)
- Green grapes (any green fresh fruit)
- Potato chips
- Crackers
- Gold Chocolate Coins
**I purchased all of my ingredients from Trader Joe’s, including the Irish Porter cheese, but you should be able to find most of the items at your local grocery store.

Other Additions:
- Soft pretzels and spicy brown mustard
- Green candy
- Green apples, pears or kiwi
- Persian cucumbers or cornichons
- Lucky Charms cereal (use the marshmallows)
- Shamrock-shaped cookies
- Hard-boiled eggs
- Irish soda bread
Pro Tips:
- Use a dinner plate with a lip, roughly 9″ – 10″.
- Get four-leaf clover cookie cutters of different sizes to use for the cheeses.
- Use toothpicks or cocktail sticks to hold the ham and turkey rolls together.
- If you don’t want to use candy, swap the gold coins out for orange slices to represent the gold.
- My go-to potato chips are Siete, and my go-to crackers are Simple Mills.
- Every item can be tailored to your tastes, but keeping with the green, white, and gold color palette makes for a cute St Patrick’s Day snack board.

I definitely had leftovers that I stored in the fridge and nibbled on throughout the week.
This St. Patrick’s Day charcuterie board makes the perfect appetizer to bring to a small gathering for any occasion, especially in the Spring. The best thing is that it is 100% customizable. Use your imagination!

Equipment
- 1 Dinner plate with a lip
- 1 shamrock cookie cutter
- 1 Cheese knife
- Toothpicks
Ingredients
- 1 brie wheel
- 1 dip or spread
- 3-4 slices turkey
- 3-4 slices ham
- 1 wedge Irish Porter cheese
- 1 small log goat Cheese
- 1 honeycomb
- 1 pkg sugar snap peas
- 1 green bell pepper
- 1 bunch green grapes
- 1 pkg potato chips
- 1 pkg crackers
- 1 pkg gold coins
Instructions
- Cut out a shamrock shape from the wheel of brie using a 4" cookie cutter.
- Place brie in the middle of the plate or wherever it works best for your design.
- Place the small bowl of onion dip (or other spread, dip, or jam you are using) on the plate.
- Place the other snacks around the brie and the dip bowl until you've filled the plate.
Notes
- Make sure to distribute the types of snacks and colors evenly on the plate.
