My easy CREAMED CORN DIP RECIPE with cream cheese is the perfect year-round appetizer, but it’s extra comforting during the holiday hosting season! Made with cream-style corn, smoked Gouda, and a touch of spice from the peppers and paprika. It’s super easy to make and comes together in under 40 minutes, start to finish! Plus, it’s one of those dishes that’s as good, if not better, the next day, so you can definitely make this one ahead of time.

One of my favorite childhood memories was having meals at my Granny’s house. She made everything from scratch, of course, from fried chicken to creamed corn to banana pudding. Since she’s been gone, we’ve tried replicating her creamed corn recipe. We’ve come close, but it’s just not quite the same without using fresh corn like she did, and I don’t have time for that in this season of life.
So in her honor, I created this Creamy Corn Dip with Gouda, cream cheese, sour cream, bell peppers, green onion, and a little jalapeno and smoked paprika. It’s not Granny’s creamed corn side dish, but it makes me think of her nonetheless!

How to Make Cream Cheese Corn Dip
Key Ingredients:
Here’s what you’ll need to make this golden, bubbly dip:
- 1 cup Cream Style Corn – This is the base that gives the dip its creamy texture.
- 1 can Whole Corn, drained – Adds sweet pops of sweet corn throughout every bite.
- 1 cup Gouda cheese, shredded – Rich, buttery and delicious.
- ½ cup Cream Cheese, softened – Cream cheese brings everything together.
- ½ cup Sour Cream – Adds a tangy balance to the richness of the other ingredients.
- ¼ cup Green Onions, chopped – A pop of color and crisp, mild onion flavor.
- ¼ cup Red Bell Pepper, chopped – For crunch, color and a touch of sweetness.
- ½ tbsp Jalapeño, diced – The jalapeño adds the perfect amount of mild heat.
- ¼ tsp Smoked Paprika – Rounds out the dish with a warm, smoky finish.
- A pinch of Salt & Pepper – To finish it off!

Instructions:
- Preheat oven to 375°F (190°C) and lightly grease a baking dish with cooking spray. (I love my olive oil sprayer)
- Shred the cheese and chop the green onions, red bell pepper and jalapeno.
- Combine all ingredients into a large mixing bowl. Stir until completely combined.
- Transfer the corn mixture into your greased baking dish and smooth the top layer with your spatula.
- Bake for about 30 minutes, until hot and bubbly and the edges are golden brown.
- Remove from the oven and let it sit out for 10-15 minutes before serving so the dip can set.
- Serve warm with tortilla chips, crackers, toasted baguette slices, or sliced veggies.






Pro Tips
Soften the cream cheese. Make sure to soften the cream cheese; it definitely makes mixing easier. Put the cream cheese in a microwave-safe dish and heat for about 15 seconds, 2 or 3 times and that should do it.
Grate your own cheese. Definitely skip this step if you’re in a time crunch, but I do prefer the taste and texture from grating my own cheese. Plus, if you’re using Gouda it’s hard to find pre-shredded. If you don’t have Gouda, I’ve made this recipe with cheddar cheese, and it works well too!
Don’t skip the paprika! I think the smoked paprika gives the dip its warm, smoky note. Don’t be afraid to add a little more if you like the flavor. I’ve made it with 1/2 tsp of smoked paprika and I really enjoy it.
Let it set. The key to the perfect consistency is to let the dip set for 10-15 minutes before serving. It will be a little runny when it comes out of the oven because of the cream-style corn, but if you let it set for a few minutes, the consistency will be perfect!

Freeze: Freezing is not ideal. You may lose the texture when freezing, so I think it’s best to enjoy it fresh.

How to Reheat
OVEN: Warm in a 350°F (176°C) oven for 10–15 minutes, until hot and bubbly again.
MICROWAVE: For individual servings, heat in the microwave for 30 seconds at a time, stirring occasionally.
