Preheat oven to 375°F (190°C) and lightly grease a baking dish with cooking spray.
Shred the cheese and chop the green onions, red bell pepper and jalapeno.
Combine all ingredients into a large mixing bowl. Stir until completely combined.
Transfer the corn mixture into your greased baking dish and smooth the top layer with your spatula.
Bake for about 30 minutes, until hot and bubbly and the edges are golden brown.
Remove from the oven and let it sit out for 10-15 minutes before serving so the dip can set.
Serve warm with tortilla chips, crackers, toasted baguette slices, or sliced veggies.
