Preheat oven to 375°F (190°C) and lightly grease a baking dish with cooking spray.
Shred the cheese and chop the green onions, red bell pepper and jalapeno.
Combine all ingredients into a large mixing bowl. Stir until completely combined.

Don't skip letting the dip set. Because of the cream-style corn, the dip will come out of the oven slightly runny. If you let it set for 10-15 minutes before serving, the consistency will be perfect!
