Key Ingredients

Potato Chips. Use thick-cut chips like kettle-cooked or wavy potato chips to hold up under the toppings.

Brie Cheese. Brie cheese is creamy and rich and melts easily, making it perfect for this dish. If brie isn’t your thing, camembert or a mild, soft goat cheese will also work.

Fig Jam . The jam adds a subtle sweetness to this savory snack. Don’t have fig jam? Apricot preserves or other jams will work. If you can find it, try bacon jam too!

Speck or Prosciutto. Looking for a little added depth and protein? Add speck, prosciutto or any cured meat you like.

Herbs or Veg. In my opinion, fresh herbs always elevate and finish off a recipe. Add chopped thyme (what I used), rosemary, parsley, chives or thinly sliced green onion to round out the potato chip charcuterie board.

How To Make Charcuterie Chips

Ingredients:

  • 1 Bag Potato Chips (I love these Boulder Canyon Chips)
  • 1 Wheel of Brie Cheese
  • 2-3 Slices of Smoked Ham (Speck), Prosciutto or any cured meat
  • Fig Jam
  • 1-2 tbsp Thyme, chopped

Equipment:

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Place a piece of parchment paper on a 9×13 cookie sheet. You can definitely use a full-size cookie sheet if you’re feeding a large crowd and need to double the recipe.
  3. Spread the potato chips on the cookie sheet in an even layer.
  4. Spread the sliced brie, prosciutto pieces and dollops of fig jam evenly on top of the chips.
  5. Bake in the oven for 10-15 minutes or until the cheese is melted.
  6. Pull the chips from the oven and sprinkle the thyme on top. Serve immediately and enjoy!

Pro Tips

Honestly, I’ve got nothing! These are pretty perfect as is! You can always make these your own by using any variety of cheese, meat, jam or herb combination that makes your heart happy!

How To Store & Reheat

Storing. Store in an airtight container in the fridge for 2-3 days.

Reheating. Personally, if there are any chips left, the only way I would reheat them would be in the oven. If you removed the chips from the cookie sheet to serve, place them back on a cookie sheet and put them in a cold oven. Set your oven to 300°F (150°C) and let them heat up until warmed through and the chips are crispy, about 5-7 minutes. Keep an eye on them to avoid burning the chips.

FAQs

​Can I prepare this recipe ahead of time? You can cut the brie and tear the prosciutto in advance, but assemble the chips right before baking and serving to keep the nachos crispy and fresh.
