Preheat your oven to 350°F (175°C).
Place a piece of parchment paper on a 9×13 cookie sheet. You can definitely use a full-size cookie sheet if you’re feeding a crowd and need to double the recipe.
Spread the potato chips on the cookie sheet in an even layer.
Spread the sliced brie, prosciutto pieces and dollops of fig jam evenly on top of the chips.
Bake in the oven for 10-15 minutes or until the cheese is melted.
Pull the chips from the oven and sprinkle the thyme on top. Serve immediately and enjoy!
