The Best 3-Ingredient Sugar Cookie Ice Cream Sandwich
This recipe for The Best 3-Ingredient Sugar Cookie Ice Cream Sandwich began with an ice cream scoop gadget that my friend Christine shared with me. She told me she was making ice cream sandwiches for her kids and and I was like, “From scratch?” Luckily, her answer was no. She just grabbed some store-bought cookies from the grocery store, a half gallon of ice cream, and used said gadget to make the sandwiches. Add some sprinkles, serve ’em up and you’re instantly mom of the year!
No baking needed, just a few store-bought items, and well, of course…the gadget! You could definitely use a good old-fashioned ice cream scoop, but the gadget is much more fun and makes the perfect cylinder of ice cream for the cookies!

How To Make A Sugar Cookie Ice Cream Sandwich
Equipment:
- Ice cream scoop (this is my favorite ice cream gadget)
- Serving platter or plate
- Spatula
- Small bowl for the sprinkles
Ingredients:
- 1 Package of Store-bought Cookies (we used sugar cookies, but any flavor works)
- 1 Half Gallon Store-bought Ice Cream of your choice (we used chocolate chip cookie dough)
- 1 Jar of Sprinkles (I ordered these sprinkles online, no artificial dyes)
Instructions:
- Lay the cookies out on a platter, tops down.
- Using your gadget (or ice cream scoop), place a scoop of ice cream on the inside of one cookie. Place the other cookie on top of the ice cream.
- Slowly and gently, press the two cookies together so the ice cream spreads out almost to the edge of the cookies.
- Pour the sprinkles in a bowl. Hold the assembled cookie over the bowl and sprinkle the sprinkles, or other topping, on the ice cream portion, rotating as you go until the ice cream is covered.
- Once assembled, cover or wrap the cookies and put them back in the freezer to make sure the ice cream firms back up.
- After scooping ice cream for two or three cookies, use your spatula to spread the ice cream in the carton, creating a smooth layer to scoop your next batch.
- Repeat steps 2-6 until you’ve assembled all of the sandwiches.

#1 Make sure the ice cream is fully frozen, not soft.
#2 Choose cookies that are not overly chewy or crunchy; somewhere in between is best.

- Use mini chocolate chips, mini M&M’s, toffee bits, or crushed nuts instead of sprinkles.
- Melt some chocolate and dip half of the cookie or the edges of the cookie in the chocolate and refreeze.
- Use frozen yogurt, sorbet, dairy-free ice cream or any other swap you prefer.
- Use gluten-free sugar cookies to make this dessert suitable for gluten sensitivities.
- If you don’t want to use store-bought cookies, find a simple cookie recipe and whip them up yourself!

Freezing & Storing Leftovers
The only problem here is eating the ice cream sandwich cookies faster than they melt! But is that really a problem? Simply keep them in the freezer until you’re ready to serve and wrap them up and put them back in the freezer if there are any leftovers.
Wrap each cookie ice cream sandwich tightly in plastic wrap, foil or parchment paper and place them back in the freezer. Freeze for up to one month for the best freshness. If you have leftover cookies, store them in an airtight container at room temperature for up to three days. Keep ice cream in the freezer tightly sealed to prevent freezer burn.
Ways to Use Leftovers
If you have leftover sandwiches that have melted a little or just don’t look as good as when you first made them, don’t let them go to waste! Make an ice cream cookie trifle by layering broken cookie pieces with scoops of ice cream and fruit or chocolate sauce in a glass to create a quick and impressive dessert. Or make a yummy milkshake by blending up the leftover sandwiches and some extra ice cream.
