The Best 3-Ingredient Sugar Cookie Ice Cream Sandwich 

These sugar cookie ice cream sandwiches are the best bang for your buck and time! Using only 3-store-bought ingredients, they are the perfect party dessert or after-school snack for the kids!

Ingredients
  

  • 1 Package Store-bought cookies 16 count
  • 1 Half Gallon Ice Cream
  • 1 Jar Sprinkles

Equipment

  • 1 Ice cream scoop
  • 1 Serving plate or platter
  • 1 spatula
  • 1 Bowl for the sprinkles

Instructions
 

  1. Lay the cookies out on a platter, tops down.
  2. Using your ice cream scoop, place a scoop of ice cream on the inside of one cookie. Place the other cookie on top of the ice cream.
  3. Slowly and gently, press the two cookies together so the ice cream spreads out almost to the edge of the cookies.
  4. Pour the sprinkles in a bowl. Hold the assembled cookie over the bowl and sprinkle the sprinkles, or other topping, on the ice cream portion, rotating as you go until the ice cream is covered.
  5. Once assembled, wrap the cookies in foil or plastic wrap and put back in the freezer to make sure the ice cream firms back up.
  6. After scooping ice cream for two or three cookies, use your spatula to spread the ice cream in the carton, creating a smooth layer to scoop your next batch.
  7. Repeat steps 2-6 until you've assembled all of the sandwiches.

Notes

  • Make sure the ice cream is fully frozen, not soft, before assembling the ice cream sandwiches.
  • Choose cookies that are not overly chewy or crunchy; somewhere in between is best.
  • Use a cookie scoop for even ice cream portions.
