Watermelon Skewers with Feta, Mint and Blueberries

Easy and delicious watermelon feta appetizer bites that are sweet and tangy.

Ingredients
  

  • 1 Watermelon
  • 2 Blocks Feta Cheese
  • 1 Bunch Mint
  • 1 Pint Blueberries
  • Balsamic Glaze

Equipment

  • Skewers (wooden or metal)
  • Sharp knife
  • Cutting board
  • serving platter or tray

Instructions
 

  1. Slice watermelon and feta cheese into bite-sized cubes.
  2. Wash mint and pull apart leaves. Wash blueberries
  3. Assemble skewers with the watermelon on the bottom, then the feta, then a mint leaf, top with blueberry.
  4. Drizzle generously with the balsamic glaze.

Notes

  • Try to cut the watermelon and feta into similarly sized bites. The colder the ingredients, the easier to cut. 
  • It will be easier to cut the feta cheese if you pop it into the freezer for about 10-15 minutes before.
  • Chill all ingredients before assembling the skewers and before serving.
