Creamy Tomato Bisque Soup with Basil and Goat Cheese

This easy tomato bisque recipe with basil goat cheese and chili oil is a great way to serve a warm, comfort food appetizer to guests without spending all day in the kitchen! With just 4 main ingredients, this easy, semi-homemade soup recipe is the perfect cozy dish on a crisp fall day!

Ingredients
  

  • 2 cans Tomato Bisque
  • 1/2 of a 10.5 oz. log of Goat Cheese (or a small 4 oz log will do in a pinch)
  • 1/4 - 1/2 tsp Sea Salt, to taste
  • 1/4 - 1/2 tsp Ground Black Pepper, to taste
  • 2 tbsp Fresh Basil
  • 1/2 tsp Calabrian Chili Oil, to taste

Equipment

  • Medium Size Pot

  • Mini Dessert Bowls

Instructions
 

  1. Pour the soup into a pot and turn the stove to medium-high heat and warm the soup until it starts to bubble.
  2. Slowly add the goat cheese and stir until well combined.
  3. Add the salt and pepper and stir.
  4. Add the chopped basil and stir.
  5. Then add several drops of chili oil and stir. Taste the soup and add more chili oil until you reach the desired level of spice.
  6. Turn your stove down to medium-low heat or low, depending on your stove, and let it simmer for 5-10 minutes so the flavors combine.
  7. Ladle equal amounts into dessert or parfait cups and serve with a gooey grilled cheese sandwich slice. Garnish with a basil leaf, serve and enjoy!

Notes

  • If you're serving this as a dinner and not an appetizer, it will feed four people. Serve with a full-size grilled cheese sandwich.
