How To Make the Trader Joe’s Mini Sheet Cake Hack
Equipment:
- Cutting Board
- Icing Spatula
- Large Knife
- Cheese Slicer (optional)
- Serving Platter
Ingredients:
- 1 Trader Joe’s Pumpkin Spice Mini Sheet Cake
- Fall-Themed Chocolates for Topping (or topping of your choice)
Instructions:
- Open the mini sheet cake, remove it from the package, and place it on a flat surface or cutting board. Allow the cake to come to room temperature.
- Using your spatula, spread out the icing to reach the edges of the cake and smooth to your liking.
- Using a large knife and/or cheese slicer, slice the cake into equal bite-sized pieces; 5 rows down and 3 rows across. Makes about 15 bites.
- Top each mini cake bite with a chocolate pumpkin.

Pro Tips:
- I like to use my cheese slicer to create a straight line, then cut through the cake using my knife.
- Make sure the icing comes to room temperature. If it is cold, it won’t spread easily.

Recipe Riffs & Swaps:
Choose your cake. Trader Joe’s also has other seasonal varieties, like a chantilly cream vanilla bean cake, a carrot cake, a lemon and strawberry cake – perfect to top with fresh berries, lemon slices or edible flowers. The options are endless!
Choose your toppings. Top your mini cakes with any candy or fruit you love that goes along with the season you’re in. These pumpkin chocolates pair perfectly with the cozy fall flavors of the pumpkin spice cake!
Make a Layer Cake. You could also use several of Trader Joe’s mini sheet cakes to make one multi-layer cake. Just place the cake layers on top of each other and cover the entire cake with store-bought frosting. Easy peasy!

Freezing & Storing
Freezing: Store leftovers in an airtight container and freeze for up to 2 months. Thaw overnight in the fridge.
Storing: Keep leftover cake covered in the refrigerator for 4-5 days.
