I discovered these Boozy Fireball Infused Pineapple Bites when my friend, Emily, brought them to our annual end-of-summer weekend at Lake Keowee last year. After just one boozy bite, I knew I had to write about them!

The funny part of the story is that we left the pineapple sitting out and our group of nine kids proceeded to snack on them, assuming they were just pineapple chunks! Luckily, we realized it after they had only had a few, but secretly, I think it was a testament to how delicious they are! Oh, and did I mention they’re only three ingredients and so easy to make?

How To Make The Best Boozy Fireball Infused Pineapple Bites

Equipment:

Ingredients:

  • 2 Fresh Whole Pineapples, cut into cubes
  • 2 Cups Fireball Cinnamon Whiskey
  • Ground Cinnamon (to taste)

Instructions:

  1. Using your knife, cut the top and bottom off of your fresh pineapple, then slice off the exterior skin. Slice around the core of the pineapple and discard the core. Cut slices into evenly sized cubes.
  2. Place the cut pineapple into a storage container or Ziploc bag.
  3. Pour the Fireball over the pineapple, generously sprinkle with ground cinnamon, and close the lid.
  4. Lightly shake and move the container around so that the Fireball evenly saturates the pineapple.
  5. Place the pineapple in the fridge for at least 2 to 3 hours or overnight before serving. The longer they soak, the boozier they will be!
  6. Strain the excess liquid from the pineapple with a strainer. Return the pineapple to the container or bag to store, or place it on a platter for serving.
  7. If serving at a party, put a toothpick into each chunk and arrange on a platter, or literally just eat them with your fingers right out of the container. They’re that good!

Pro Tips

#1 Cut the pineapple evenly. There are several ways to cut a pineapple, but for this recipe, I recommend following the instructions on the recipe card so you get the most evenly sliced pieces.

#2 Use an airtight container for soaking. Put the pineapple cubes in a shallow container or bag so that each piece is saturated and gets infused with the Fireball whiskey.

#3 Soaking time is key. You can certainly serve after the pineapple is soaked for several hours, but I prefer soaking my pineapple overnight.

#4 You may have to strain several times or each time you pull them out of the refrigerator to get rid of excess moisture.
