How to Make Baked Feta Dip with Tomatoes and Basil
Equipment:
- 8×10 inch baking dish or smaller (this is the baking dish I use and love)
- 1/4 measuring cup
- Serrated knife
- Spatula
Ingredients:
- Extra Virgin Olive Oil (my favorite EVOO)
- Feta Cheese
- Cherry Tomatoes
- Fresh Basil
- Italian seasoning (to taste)
- Salt & Pepper (to taste)
Instructions:
Pour 1/4 cup extra virgin olive oil into the baking dish. Place the feta block in the center of the dish. Flip it several times to coat with extra virgin olive oil. Add the tomatoes around the feta. Stir several times to coat with EVOO. Sprinkle salt, pepper and Italian seasoning.
Bake at 400 for 25 minutes or until bubbly. With about 10 minutes to go, add chopped basil to the top and return to the oven. When baked, pull from the oven and smash unburst tomatoes with the back of a fork or spatula and stir to combine.
**Stir with a spatula until you reach your desired consistency. I prefer my dip creamy, but if you prefer a less creamy texture, skip smashing the tomatoes with the fork and just give it a quick stir or two. Enjoy!
