Easy Buffalo Chicken Dip Bites Recipe {On Crackers}

In my opinion, the key to this recipe is the hot sauce. Frank’s RedHot is by far my favorite buffalo sauce. I used the original flavor but there is a spicy version if you want more of a kick. The juicy chicken, the zesty buffalo sauce, and the creamy mayo are the perfect combination! Your guests will not be able to stop eating these!

- 4 cups shredded chicken, equal to about 2 large breasts
- Chicken broth
- Ranch seasoning packet (optional)
- Mayonnaise
- Hot sauce
- Salt
- Woven wheat crackers (or a sturdy cracker of your choice)
- Jalapenos (for garnish)


How do you make buffalo chicken dip bites?
Boil chicken breast, cook the chicken in an Instant Pot or buy a rotisserie chicken (or pre-pulled rotisserie chicken if your store has it). Once fully cooked, shred or pull the chicken and transfer it to a mixing bowl. Add the mayonnaise, hot sauce, and salt, and stir until combined. Transfer the chicken mixture to a greased baking dish and bake at 350 degrees Fahrenheit for 20-23 minutes or until slightly bubbly and the edges are starting to brown.
Let the buffalo chicken cool to the touch and assemble your bites by scooping a spoonful of chicken onto each cracker and top with a jalapeno slice. This can be a little messy and you will likely need to use your hands to form the mound on top of the cracker. I wiped off my platter once the bites were assembled. Serve and enjoy

Easy Buffalo Chicken Dip Bites Recipe {On Crackers}
Equipment
- 1 large mixing bowl
- 1 baking dish
- 1 spatula
- 1 serving platter or tray
Ingredients
- 4 cups chicken, cooked and shredded (equal to about 2 large chicken breasts)
- 1 cup mayonnaise
- 3/4 cup hot sauce (Frank's RedHot is my favorite!)
- 1/2 tsp salt
- 1-2 tbsp ranch seasoning (optional) (recipe works fine without it but, I use it if I have any in my pantry)
- 1 box woven wheat crackers
- 1-2 jalapenos, sliced (and seeded if you prefer)
Instructions
- Cook and shred the chicken. I like to cook my chicken in the Instant Pot, but you can also boil the chicken for 10-15 minutes depending on the size of the breasts. For the Instant Pot, cut your chicken breasts into strips or pieces. Pour 1/4 cup of broth or water into the Instant Pot then add the chicken. Sprinkle ranch seasoning on the chicken (if you are using it) and give it a stir. Put the lid on the Instant Pot, put the dial to seal, and set it to manual between 11-13 minutes. When finished, cut into a piece of chicken to make sure it's cooked through.
- When finished cooking, drain the chicken in a colander, let it cool then shred it by hand or with a knife and fork.
- Put the shredded chicken in a large bowl, add the mayonnaise, hot sauce, and salt, and stir until well coated.
- Coat a baking dish with cooking spray and transfer the chicken mixture to the dish. Bake on 350 degrees for 20-23 minutes or until it is a little bubbly and the edges are golden brown.
- Let dip cool to room temperature or until it is cool enough to handle.
- Place crackers on a serving platter and add a scoop of chicken dip to each cracker.
- Top each bite with a slice of jalapeno and serve.

Pro tips:
- Use a pre-cooked rotisserie chicken as a shortcut.
- McCormick’s Just 5 is my favorite ranch seasoning packet with clean, simple ingredients.
- Drizzle with your favorite ranch dressing or blue cheese dressing for a little extra something.
- Don’t put this on crackers and it becomes a delicious buffalo chicken dip recipe. Serve with tortilla chips, crostini, or crackers of your choice!
- If serving as a dip, garnish with green onions, diced jalapenos, or cilantro.
- Another way to serve the buffalo dip is in phyllo cups. Instead of baking the dip first, place your phyllo cups in a muffin tin, add the chicken mixture to the cups, and bake. (You will need to adjust the baking time, I would do 5-10 minute increments and check as you go).
- If you have any dietary restrictions or are just looking for a high-protein, low-carb, gluten-free snack, serve this recipe as a dip instead of on crackers with carrot sticks, celery sticks, or lettuce cups.
